Food I Love : Pan Grilled Spicy Chicken

I have been trying to change my food habits and hopefully lose some weight since I had my last child, check herehere,   here, here and here for my journey so far. I say "trying" because for me it has not been an easy journey for the following  reasons.

Firstly, I'm a food lover through and through, I love to have foodie discussions for hours on end, I love my lab sessions where I test out recipes (I consider recipe testing a scientific experiment by the way :-) ),   and each time I travel outside my place of residence I like to try out every new, strange and delicious goodness my destination has to offer.

Secondly, I am one of those people that do not believe there are any short cuts to weight loss, and  this perception is borne out of experience, trust me when I say I have  tried the most popular weight loss fads out there :).  C'mon guys science is no spoof, your weight is a delicate balance  between what you expend and what you ingest and when this is tilted too much to one side, pow!!! weight gain or weight loss (rarely), shikena!

For me, weight loss is all about developing a healthy lifestyle, I eat everything I want BUT in moderation and I exercise regularly.
Its been a journey where my will power has been tested to its max :), but its been so worth it! At the moment I have reached my weight loss goal, and even surpassing it, woohoo! hopefully I would be doing a post in future of everything I did to get there.

Today's recipe is one of the recipes that made my weight loss journey easier, this was my go-to recipe on evenings when I wanted something quick, tasty, nutritious and that was insanity friendly.

These are the Ingredients you would need

Boneless Skinless Chicken Breast
White wine vinegar
Sesame seed oil
Fish sauce
Red chilli peppers
Ginger
Garlic
Brown Sugar Or Honey

1.  Put all ingredients in a blender except the chicken and blend to form a smooth paste

2. Place chicken on a board and  flatten slightly to even out its thickness with a kitchen  mallet or a pestle.

3. Pour blended Ingredients into chicken and allow to marinate in the refrigerator for at least one hour, I'll recommend longer because you get a richer  flavour.

4. Heat up an oiled pan or griddle until very hot and place chicken on it to cook for about 10mins on each side or until done, do not overcook so your chicken  remains juicy and is not chewy.

Voila! Serve with a salad, rice or whatever you fancy. This recipe can also be used for tender cuts of beef.

I served mine with this miserable excuse of a salad :)

Tried it?  Let me know what you did differently and how it came out.

Bon Appetit!
