Over the years I have tried several recipes for fried rice, this recipe is the result of my years of searching for the ultimate fried rice recipe. It has the right balance of texture and flavor and is very easy to make. You can rustle it up with almost any combination of vegetables you have available and you still be quite pleased with the result.
Fried Rice
Ingredients
• Long grain rice (3 cups)
• 2 large green pepper and 1 large red bell pepper(tatashe)

• 3 medium size Carrots
• Half of a small sized Onion
• 1 cloves of garlic, crushed
• Half a cup of Sweet Corn
• Half a cup runner beans
• 1 cup of Shrimps (peeled and washed)
• Chorizo or any other nicely flavored sausages
• 5 large habanero pepper (Rodo, adjust this based on your heat tolerance)
• 4 cups Chicken stock
• Extra virgin olive oil - 4 table spoons
• 3tbs Margarine
Seasoning
•3 tbs Dark Soy sauce
• 1tsp Italian seasoning (combo of thyme, oregano, marjoram, basil, sage and rosemary. Spice supreme has a decent brand)
• half a tsp Tumeric powder (you can use curry powder instead, I prefer the buttery undertones of turmeric)
• Salt
• Knorr Chicken Cubes
Wash the rice and soak in very hot water for about 10 minutes. Drain the water from the rice and add the chicken stock just to cover the rice in a sauce pan and add all seasoning and salt to taste. Cook the rice with the chicken stock until its just cooked, Not soggy.
To make the sauce chop up all vegetables. In a sauce pan heat up the oil, add the onions and garlic and cook until translucent. Then add your olive oil Fry for about 30 seconds. Then add the sausages cook for a minute and add the shrimps and fry for another 30 seconds. Then add the runner beans, carrot and cook for 3 mins before adding the other vegetables.. Add curry powder, Knorr cubes and salt to taste. Cook for about 5 minutes
In a wok add some sauce and rice and a teaspoon of margarine. Fry for about 3 minutes using a wooden spoon. Just add enough sauce to fry the rice in. We don't want it to be soggy. I like to fry mine until its quite dry. Continue this until you have cooked all the rice.

ReplyDeleteI was lucky to have some of this fried rice and boy was it yummy ( and i am not just saying). The texture of the rice was just right. not too hard and not at all soggy(yuck).
